Vinification and ageing

Built on the estate and very close to the vineyards to minimize the stress of the freshly harvested grapes as they are delivered to the presses, the winemaking cellar designed by Renato Di Lorenzo has just celebrated its 150th harvest: an immense heritage to be handed down to future generations.

The bond between Feudo Disisa and the vineyards that embrace the winery is the living representation of that natural synergy that exists within the immense viticultural heritage of this area. The value of the grapes that grow in these vineyards, harvest after harvest, is constantly increased through activities such as clonal selection and precise zoning, to achieve the highest quality standards.


The freshly picked grapes are conveyed to the cellar immediately, to safeguard their integrity and organoleptic profile. In the cellar all stages of the winemaking process are meticulously defined in every detail, to create wines that are an authentic expression of the vine and its terroir. Immediately after pressing, the must is poured into stainless steel vats to undergo alcoholic fermentation and, for the reds, an additional malolactic fermentation. The long macerations of the red skinned grapes maximize the extraction of polyphenols which give our wines longevity and elegance.


Some wines are aged in steel while others, those to lay down, will be left to age in oak barriques for a minimum of 18 months and in bottle for another 12, all at a constantly monitored temperature of 16ºC. Feudo Disisa’s barrique cellar is the estate’s most sacred place. Here everything is silent and fragrant with the scent of wood. To encourage the development of the silkiest tannins, the barriques are exclusively obtained from French oak wood, individually toasted according to the style and character of each label. Attention to the smallest detail, during all the evolutionary phases of the wines, this is the hallmark of Feudo Disisa.
